These were cute. Lemon and blueberry cupcakes with lemon curd middles and vanilla Swiss meringue buttercream (that I had frozen, defrosted and bought back to utter light as air smooth as silky pants perfection- this made me very happy knowing I can do this. Pink swirls and sprinkles for my girl @sophieteaart after she sold out the efffffing palladium!!!! Recipe literally- about 225-240g of soft unsalted butter, caster sugar, self raising flour, 4 eggs, 1tsp baking powder, zest and juice 1 lemon, splash milk. Whip butter first til pale then add everything else in mix til combined and light. Fold in some blueberries. Spoon Into cupcake cases bake in oven 160c about 15-20mins. Remove. cool.
