These were cute. Lemon and blueberry cupcakes with lemon curd middles and vanilla Swiss meringue buttercream (that I had frozen, defrosted and bought back to utter light as air smooth as silky pants perfection- this made me very happy knowing I can do this. Pink swirls and sprinkles for my girl @sophieteaart after she sold out the efffffing palladium!!!! Recipe literally- about 225-240g of soft unsalted butter, caster sugar, self raising flour, 4 eggs, 1tsp baking powder, zest and juice 1 lemon, splash milk. Whip butter first til pale then add everything else in mix til combined and light. Fold in some blueberries. Spoon Into cupcake cases bake in oven 160c about 15-20mins. Remove. cool. Make a hole fill with lemon curd and top with whatever you want! Easy as and alright to eat and transport across London. #cupcake #recipeoftheday #sprinkles #londonpalladium #nudieslive #cutecakes

In the words of Julia Child, Easter is all about ‘food and f………’ (who’s seen the series ????) in the words of me, it’s all about fish and in particular Loup en Croute. This is my version of the famous dish by by Julia Child. Sea bass fillets stuffed with a salmon and king prawn mousseline with almonds and tarragon wrapped in puff pastry, shaped as a fish! Served with a Choron sauce (tomato, chervil and white wine reduction) garlic and herb new potatoes and buttered greens. Serves 2.
